1 pound of strawberries, medium diced 1 tablespoon of chopped fresh mint 1 teaspoon of cayenne pepper 1 small cucumber, peeled, seeded and diced 3 tablespoons of sugar 1/2 teaspoon of salt Toss all ingredients together and chill for 20 to 30 minutes. Note: Do not keep for more than two days. Recipe serves four to six.

1 cup of fresh strawberries, sliced 1/3 cup of crumbled Gorgonzola or blue cheese 1 cup of candied pecans (recipe follows) 1 cup of sliced purple onions 4 cups of your favorite lettuce or mixed greens 1/2 cup of balsamic vinegar 1 cup of olive oil 2 tablespoons of sugar Whisk together olive oil and balsamic vinegar. Set aside for ten minutes. Toss all salad ingredients together. Drizzle with dressing mixture immediately before you serve the salads. Salads may be served with grilled chicken, steak or fish, or by themselves.

8-10 large strawberries 16 ounces of milk chocolate chips 8 ounces of ready made cheesecake filling 4 tablespoons of chopped pecans Cut the top off the strawberries and remove their cores. Using a pastry bag or sealable plastic bag, fill the strawberries with cheesecake filling. Melt chocolate chips in a microwave safe bowl, cooking in 30-second increments, stirring in between. Dip the top half of each strawberry in the chocolate. Sprinkle with chopped pecans. Refrigerate for about 20 minutes.

SPRINGFIELD, Mo. -- We're early into the gardening season but it's already time to pick strawberries. "I planted three varieties which were supposed to be ready for picking 10 days apart, but they ripened at the same time," Dan Bigbee, owner of Fassnight Farm, said on his weekly gardening feature on Wednesday on KY3 News at Noon. Bigbee says the lack of frost in April probably hurried the strawberries along. He also says heavy rain can be de detrimental to the harvest. 10 slices of white bread, cut into cubes 1 cup of sliced strawberries 1 teaspoon of ground cinnamon 6 eggs 3/4 cup of white sugar 2 teaspoons of vanilla extract 1/2 teaspoon of salt 3 cups of liquid vanilla soft serve mix 1 pinch of ground nutmeg Heat oven to 375 degrees. Grease a medium baking dish. Spead out cut bread onto dish. In a medium bowl, combine sugar, eggs, soft serve, cinnamon, nutmeg, salt and vanilla extract. Stir well. Spread sliced strawberries over cut bread.

1 pound of fresh strawberries 3 tablespoons of granulated sugar 1 tablespoon of fresh mint 1 loaf of French bread 4 tablespoon of cinnamon sugar 1/2 stick of butter, melted Core and slice the strawberries. Chop mint leaves. Sprinkle mint and 3 tablespoons of sugar over the strawberries; toss and let sit for 30 minutes. Slice French bread in half long ways. Brush with melted butter. Sprinkle with cinnamon sugar. Toast in an oven until crispy.

lemon cake mix (make up the batter but don't pour into a pan) 1 container of premade Philadelphia cheesecake filling 1 small package of instant cheesecake pudding (do not prepare) 1 2-pound container of fresh strawberries 1/4 cup of sugar Preheat oven to 350 degrees. Pour one third of the cake batter into a 9x13 parchment lined pan. (This is all the batter that you will use. You may make what you wish with the rest of it.) Cook until golden brown spots start to appear on top of the cake (about 10-15 minutes)
