TORTE 6 egg yolks 1 can (15 ounce) of pumpkin (not “pie filling”) 1 ½ teaspoon of vanilla 1 ½ teaspoon of pumpkin pie spice (following ingredients are mixed separately) 6 egg whites ¾ teaspoon of cream of tartar ¾ cup of sugar ½ cup of chopped pecans ½ cup of chopped pitted dates ¾ cup of buttery cracker crumbs (“Ritz” or equivalent - will be about 12 crackers; it's easy to crush them in a ziplock bag, using a roller or a glass) CREAM CHEESE FILLING: (may be doubled, if desired - but I found a single recipe just fine - unless you want to have the filling and topping almost as thick as the cake itself)
