1 1/4 cups of sour cream 1/4 medium purple onion, diced 1 tablespoon of capers, chopped 2 tablespoons of fresh chopped dill 12 ounces of sliced smoked salmon 6 6- to 10-inch crepes Combine sour cream with onions, capers and dill.  Add black pepper if needed. Spray medium sized sauté pan with nonstick coating or coat with butter.  Heat a crepe on one side until edges begin to crisp up. Remove from pan. Place 1/6 of the cream mixture in the center of one of the crepes; top with two ounces of smoked salmon.

-1/2 cup of feta cheese -1/2 cup of fresh bread crumbs (from about 3 slices) -fresh herbs (2 tablespoons each of chives, basil, oregano, dill, parsley, etc., depending on what you like) -olive oil (drizzle in small amount until it all starts to pack together) -fresh ground black pepper -(No salt because of the brine from the feta) Lay fillet on cutting board, skin side down.  Pack the feta mix into the top of the fillet.
