Banana Bok Choy SaladSalad 2 cups thin sliced bok choy2 cups spinach leaves2/3 cup chopped banana1/4 cup chopped green onion1/4 cups roasted pumpkin seeds or chopped cashews1/4 cup shredded carrots of thinly sliced red bell pepper Dressing 1/2 cup rice wine vinegar1 cup vegetable oil1/2 cup diced banana2 Tbsp fresh minced ginger1/2 tsp cayenne pepper2 teaspoons honeyTT salt and pepper Put all dressing ingredients into a bowl and mash 1/2 cup diced bananas with a fork. Wisk together dressing vigorously until all ingredients remain incorporated. Toss together bok choy spinach bananas and green onions. Toss with vinegarette. Top with seeds or nuts and carrots or bell peppers. Another great addition would be some grilled fatty fish or a grilled chicken breast.
