Enoch's BBQ Beans
2 large cans of pork and beans1 medium onion, chopped fine
1/2 cup of apple cider vinegar
1/2 cup of yellow mustard
1 cup of molasses
1/2 cup of brown sugar
1/2 cup of Worcestershire sauce
1 tablespoon each of hot sauce (like Texas Pete) and a barbecue rub (like E's BBQ Rub)
1 handful of pulled pork (If you don't have any at home, it can be purchased at the restaurant by the pound or there are several kinds for sale at grocery stores without sauce.)
Combine all ingredients and cook in a large saucepan on the stove at a medium to low heat for about 30-45 minutes, possibly longer, depending if you softened the onions. Stir frequently as the sugar and molasses want to stick at the bottom.
(Tip: If you are pressed for time, you can "sweat" the onions first by putting in just enough water to cover them and microwaving them for about 4 minutes.)
