Broccoli and cheddar beer soup 1/12/12

1 stick of butter
2/3 cup of flour
1 small yellow onion, finely diced
2 cups of chopped broccoli
4 cups of milk
1/2 cup of beer
2 cups of shredded cheddar
(to taste) salt and pepper

In a stock pot, melt butter on medium high heat and add chopped onions. Sauté until onions are tender and begin to become translucent.

Add flour and stir for approximately one minute or until flour begins to smell slightly nutty. Then add beer; whisk until incorporated. Then add milk slowly while whisking constantly until milk is smoothly incorporated and there are no lumps.

When milk becomes hot and begins to thicken, whisk in shredded cheddar cheese until it's melted and smooth.  Periodically scrape bottom of pan so cheese does not stick and burn to the bottom.

Add broccoli and turn to low to simmer for 15 minutes.  Add salt and pepper to taste and serve with crusty bread.

Recipe serves six to eight.
