Provel and prosciutto grilled cheese sandwich 4/14/11

12 ounces of provel cheese
8 ounces of shaved prosciutto
8 slices of dense sourdough bread
2 tablespoons of olive oil
1 tablespoon of Italian seasoning

Lay out four pieces of bread.  Place two ounces of prosciutto on each piece.  Top prosciutto with three ounces of shredded provel cheese.  Sprinkle a small amount of Italian seasoning onto cheese and top with another piece of bread. 

Heat a medium-sized skillet to medium high heat.  Drizzle one half teaspoon of olive oil onto heated pan.  Spread olive oil around.  Place sandwich onto hot skillet.  Once sandwich is golden brown on the bottom side, flip over to toast the other side.  Cook until cheese is melted through. 

Sandwiches may also be cooked on a pannini grill. 

Recipe serves four.
