4 medium sweet potatoes, peeled and diced1 + 1/2 stick of butter1/2 cup of milk(to taste) salt and pepper1/3 cup of flour1/3 cup of brown sugar1/4 cup of instant oats1/4 cup of choppped pecans In a medium saucepan, boil the potatoes until fork tender. Drain and add 1/2 stick butter and milk. Mash the potatoes until fluffy and add desired salt and pepper. In a separate bowl combine the remaining butter, sugar, oats and pecans. Pour sweet potatoes into medium casserole dish. Top with streusel mixture and place in a 350-degree oven for 7-10 minutes.Recipe serves six.
