Raspberry baked chicken and oven-roasted cauliflower 3/4/10

Raspberry baked chicken

4 pounds of bone-in chicken pieces

2 tablespoons of salt

2 tablespoons of pepper

1 tablespoon of granulated garlic

1 jar of raspberry preserves

Place chicken skin side up on a sheet tray. Mix salt, pepper and garlic. Sprinkle over chicken.

Bake in a 375-degree oven until cooked all the way through, about 17-20 minutes. Remove from oven and brush with raspberry preserves.

Oven roasted cauliflower

1 head of cauliflower

2 teaspoons of salt

2 teaspoons of pepper

1 teaspoon of curry

2 teaspoons of paprika

2 tablespoons of olive oil

Cut cauliflower head in half. Place on a sheet tray, flat side down. Drizzle with olive oil. Sprinkle with seasonings, and place in a 375-degree oven.

Cook for 15 minutes. Cut in large pieces to serve.

Recipes serve 6.
