Springfield - Greene County Health Department

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

Critical Violations Found: 8
* Two severely dented cans were stored in the dry storage room (Cans were removed at the time of inspection.)
* Staff was not properly hot holding a potentially hazardous food: the chicken soup sitting on the table in the kitchen was 116 degrees (It's required to be hot held at 135 degrees or above; the soup was discarded at the time of inspection.)
* Staff was not properly cold holding a potentially hazardous food: the open bulk container of mayonnaise in the dry storage room was 72 degrees (It's required to be 41 degrees or less after opening package; the mayonnaise was discarded at the time of inspection.)
* Staff was not properly date-marking all ready-to-eat potentially hazardous foods: the prepared ranch dressing and gravy in the walk-in cooler were not properly date marked (Items were "date marked" at the time of inspection.)
* Wipe cloth sanitizing solution at cook line was too strong at 200ppm for bleach (It's required to be in the range of 50 - 100ppm; solution was changed out at time of inspection.)
* The meat slicer had excessive dried food debris on the backside of the blade (It's required to be properly cleaned and sanitized within four hours of use with a potentially hazardous food; staff must properly clean and sanitize the meat slicer before use.)
* The mop sink next to dishwash machine did not have a working backflow prevention device
* Chemical spray bottle was not labeled with common name of contents (The bottle was labeled at the time of inspection.)

The following critical violations had been corrected: 1) Meat slicer appeared to be clean; 2) A pressurized water hose will not be used at the mop sink unless a back-flow device is installed; 3) All ready-to-eat potentially hazardous foods were date marked; 4) Potentially hazardous foods were being properly hot and cold held.

1/11/10 Re-inspection
The following critical violations had been corrected: 1) Dishes and utensils appeared to be clean; 2) There was active sanitizing solution in the wipe cloth buckets at the cook line; 3) Potentially hazardous foods were being properly cold held at 41 degrees or below; 4) Management had implemented a system to maintain shellstock tags.
