Grilled ham and tomato sandwich 12/11/08

8 slices of whole grain bread

24 fresh spinach leaves

4 long slices of Swiss cheese

4 large tomato slices

1 cup mayonnaise

2 tablespoons of pesto

12 ounces of sliced ham

Combine mayonnaise and pesto and stir until completely incorporated.  On
four of the slices of bread, stack the Swiss cheese first, followed by the
spinach,  tomato and ham.  Then, on the other four slices of bread,
spread some of the pesto mayonnaise. 

If you have a panini press or grill pan, grill until golden and crispy. 
If you do not have a panini press or grill pan, use a skillet drizzled with
olive oil and cook like you would a grilled cheese sandwich. 

Recipe serves four.
