Pan seared grouper fillet encrusted with feta cheese and fresh herbs 10/3/07

-1/2 cup of feta cheese

-1/2 cup of fresh bread crumbs (from about 3 slices)

-fresh herbs (2 tablespoons each of chives, basil, oregano, dill, parsley,
etc., depending on what you like)

-olive oil (drizzle in small amount until it all starts to pack together)

-fresh ground black pepper

-(No salt because of the brine from the feta)


Lay fillet on cutting board, skin side down.  Pack the feta mix
into the top of the fillet.  With a hot skillet (oven safe) on the
burner, lift the fillet with a spatula and place into pan.  Give it a
golden edge before transferring the pan to a 400-degree oven.

Allow to bake for 6-8 minutes.  Plate up and enjoy.
