Chili lime corn on the cob and Tomato and snow pea salad with sharp feta 9/5/07

Chili lime corn on the cob

 

1 stick butter

1 tablespoon of chili powder

juice of 1/2 lime

(to taste) salt and pepper

4 ears of corn, shucked

 

In the microwave or on the stovetop, melt the butter until it's translucent. 
Then stir in the chili powder and the lime juice.  Spread over the
corn.  Sprinkle with salt and pepper, and grill until corn is
tender.

Tomato and snow pea salad with sharp feta

 

4 Roma tomatoes, quartered

1/4 pound of firm fresh snow peas

1/2 cup of extra virgin olive oil

1 cup of crumbled sharp feta

4 fresh basil leaves, chopped

(to taste) salt and pepper

 

Combine oil, salt, pepper and basil and whisk thoroughly.  Put
chopped tomatoes, peas and feta in a bowl, drizzle dressing over the top
and toss.

 

Serves four
