Ingredients2boneless skinless chicken breasts, boiled and
chopped into cubes1yellow onion, diced1 cangolden hominy1 canwhite hominy1 canRo*Tel original tomatoes and green chilies1 canMexican-style chili beans1 canstewed diced tomatoes2 cupschicken stock1 small packettaco seasoningto tastesalt and pepperfor garnishsour cream, cheddar cheese and cilantro





Directions

Put diced onion and
chicken in the pan in
which you are going to
make your soup. 
Cook on high until
onion pieces begin to
become tender.

Add Ro*Tel. 
Let cook for 5
minutes.  Add
both cans of hominy,
the beans and the
tomatoes and let
simmer another 5
minutes. 

Add seasonings and
chicken stock.  Turn
to medium and let cook
at least 30 minutes. 

Serve with a dollop
of sour cream, a pinch
of cheese and some
chopped cilantro on
top.
