Southwestern marinated pork tenderloin

Ingredients8 (3-ounce each)pork medallions1 cupbarbecue sauce1/2 cupred wine vinegar1/4 cupbeer1 tablespoongarlic, finely chopped1 tablespoonshallots, finely chopped1 pinchcayenne1 pinchchili powderjuice of 1 limejuice of 1 lemon
















Directions     Mix together all ingredients, except the pork, to make a marinade.  Pour the marinade over the pork medallions and allow to marinate in the refrigerator for six to 12 hours.  
    Prepare barbecue fire.  Grill the medallions until desired doneness, basting them with the marinade.  The internal temperature of the tenderloins should register 160 degrees.

Greene chili cream

Ingredients1 cupheavy cream1 cupfresh green chilies, puréed1/4 cupwhite wine1 pinchsalt1 pinchchili powder

Caramelized onion and Andouille potatoes

Ingredients1 1/2 poundspotatoes, peeled and washed1/2 cupmilk, hot1/4 cupAndouille sausage, chopped fine1 egg, medium4 tablespoonscaramelized onions4 tablespoonsfeta cheese1 tablespoonparsley, chopped fine1 teaspoongarlic, chopped fine1 teaspoonsalt1/2 teaspoonwhite pepper





Directions    Steam or boil potatoes until soft.  Put in mixing bowl and mix at medium speed.  Put ingredients in the order as listed.  Turn on high speed and let mix 1-2 minutes.
