Ingredients1 rackpork ribs2 cupsapple juice2 TBL.liquid smokeRub1 cupbrown sugar1/2 cupchili powder1/4 cupcumin3 tablespoonblack pepper1/4 cupsalt1 tablespooncayenne pepper3 tablespoonsugar1/2 cupinstant coffee

Directions   Trim excess fat and gristle off ribs. Combine rub ingredients and stir well. Press rub onto all surfaces of the ribs and let stand covered in a refrigerator at least two hours (overnight, if possible). Place ribs on a rack on top of a sheet pan. Pour just enough apple juice so it more than covers the bottom of the pan but does not touch the ribs. Wrap all with plastic wrap followed by aluminum foil and place in a 250-degree oven for at least four hours. Remove and place on hot grill. Baste with your favorite barbecue sauce. Cut out each individual rib and serve. Ribs may be refrigerated and kept for up to a week.
