Ingredients2 poundsred new potatoes1 cupcream1/4 cupbutter, melted1 teaspoonsalt1 dashwhite pepper1 bunchgarlic bulbs1/4 cupparsley, chopped








Directions Take the bulb of garlic and wrap it in tinfoil. Place the garlic in an oven at 350 degrees for 30 minutes. Remove and cool. Place the washed unpeeled potatoes in a large sauce pot with boiling salted water. Turn down the heat and simmer for about 20 minutes. Remove the water and let the potatoes steam dry. Then add the roasted garlic, cream, butter and parsley and smash the potatoes. Yes, they will have lumps. That's the good part. Season with salt and pepper and serve.
