Steak spinach pinwheels

Ingredients1-1/2 poundsflank steak1 bunchspinach1/3 cupfeta cheese1 dashsalt and pepper





Directions    Trim excess fat off the flank steak and make shallow diagonal cuts on one side. Place it between two pieces of plastic and pound out to about 3/8 of an inch thick. Then, on the cut side, place the feta cheese. Clean and de-stem the spinach. Place into salted boiling water until wilted. Remove and drain well. Place the spinach on the feta cheese and roll up the steak. Secure the steak closed by sticking tooth picks into the rolled steak about every inch. Cut the steak between the toothpick and slightly oil the tops and bottoms. Place on a broiling pan and broil in the oven for about five to seven minutes.
