Ingredients1/2 cupdried cherries2 tablespoonsapple juice37-inch tortillas1 tablespoonbutter (melted)1 tablespoonsugar1/4 teaspooncinnamon1 tablespoonbutter4green apples, chopped1/4 cupsugar2 teaspoonscornstarch1/2 cupapple juice
Directions Soak the cherries in the two tablespoons of apple juice for 30 minutes. Brush one side of the tortillas with the first tablespoon of melted butter and sprinkle with the first tablespoon of sugar mixed with the cinnamon. Place on a cookie sheet and cut into six wedges. Place into a preheated oven at 350 degrees F for 10-15 minutes, remove and cool.
In a large skillet, melt the second tablespoon of butter, add the chopped apples and cook uncovered for 5 minutes, or until just tender. Then add the 1/4 cup of sugar and the cornstarch together and sprinkle over the apples. Stir in the 1/2 cup of apple juice and cherries. Cook until bubbly, stirring gently as need. Cook two minutes. Remove from heat and cool.
