Grilled vegetables and marinated chicken 5/23/07

Grilled vegetables

2 zucchinis, cut into 1/4-inch rounds

2 yellow squashes, cut into 1/4-inch rounds

1 purple onion, cut into 1/4-inch wheels

1 package of whole mushrooms

2 cups of Italian dressing

Cut vegetables and marinade in dressing for 30 minutes.  Place on a
hot grill for two minutes on each side or until there are prominent
grill marks on either side.

Perfect marinated chicken

6 6-ounce boneless skinless chicken breast

1/2 cup of soy sauce

1/4 cup of olive oil

1/4 cup of distilled white vinegar

3 tablespoons of brown sugar

1 tablespoons of garlic

1 tablespoon of ginger

 

Marinate chicken for at least one hour grill until chicken is cooked all
the way through.

 

Recipe serves six
